Keeping Delicate Sauces Warm

eggs
There can be a lot of stress when making a sauce like Hollandaise, you have to make it at the last minute, you’re food is getting cold, guests are waiting…

You can make the sauce ahead of time- and keep it in a thermos, or insulated container!
Warm the container first with hot water, when the sauce is ready pour out the water, let drip dry for a few seconds, and put the hot sauce into the thermos.
This should keep your sauce at serving temperature for a few hours, with no danger of having it break!
