She has owned a small restaurant in Delaware County, New York, a catering business in New York City, worked for fifteen years for Whole Foods Market, and served Breakfast at Tiffany’s during her time working in corporate dining.
Preheat oven to 300 F
In the bowl of a food processor combine garlic, 2 tsp. salt and mustard into a paste
Rub garlic paste on top and sides of pork loin
Step 2
Slice potatoes and onion on a mandolin
Mix them together is a large bowl and toss with enough oil to coat, and sprinkle with salt to your liking
Step 3
Lay potato mixture evenly across the well oiled bottom of a roasting pan, and lay pork on top
Roast for two to two and a half hours, until pork reaches an internal temperature of 155F
Cover loosely with foil and let rest for 15-20 minutes
Step 4
Remove loin from ribs before slicing (save the ribs for cook's treat) and slice into 1/2 to 2/4" slices
