Ingredients
- 1 cup lukewarm water (about 110 degrees F)
- 1 packet active yeast (.25 oz)
- 1/2 cup sugar (plus 1 tsp.)
- 4 cups flour (plus more for kneading dough)
- 1/4 teaspoon salt
- 2 egg yolks
- 1/2 cup buttermilk
- 3 tablespoons butter (melted)
- oil for frying
- 1 teaspoon vanilla
Note
This recipe will make 30-35 beignets.
And can be made with any type of milk, I had buttermilk on hand, and it made a terrific beignet.
