Despite popular lore, there is no reason for you to rinse your chicken, in fact, all that does is potentially spread salmonella all over your sink, and does nothing to make your chicken cleaner, or safer. http://www.drexel.edu/dontwashyourchicken/
Unwrap your chicken, and dry well with paper towels. Put 2-3 paper towels on a plate, and leave the uncovered chicken in your fridge for 2-5 hours. The skin will look dry, and this is good.
Preheat oven to 375 F
Rub your chicken with olive oil (about 1 TBL) and season with salt, pepper, and the spices you like- here are some of my favorites:
garam masala or
garlic salt or
Urban Accents Moroccan Road spice blend or
Smoked paprika
Place your chicken on a V-rack and roast for 45 minutes
Terry L Anderson - I like the sound of this recipe. I will try it BUT I WILL thoroughly rinse the chicken including the cavity under running cold water….I will then as always clean the sink with bleach…to do it any other way just feels unsanitary (nasty) to me….
