It’s a lot to say, but it’s easy to make this Passover friendly French toast waffle. When I was a kid during the week of Passover my dad always made matzo-brei, sometimes sweet, like French toast, sometimes savory with onions, but I didn’t like any of it. When I mentioned my idea to make it into a waffle my brother said it sounded disgusting, but I think he may change his tune when he tried this.
Though I no longer keep with tradition, when I was growing up we generally gave up bread and leavened food for the week of Passover. I was raised as a Reform Jew, so we didn’t go through the ritual of cleaning all the chametz from every possible corner of your house. I remember learning about this in Hebrew school, not only do more observant Jews clean out pantries cabinets and things like lockers, backpacks, etc, every corner of the house, including window sills.
For people who keep kosher homes, there are four sets of dishes (at least) milk and meat dishes for most of the year, and an entire second set of each for Passover. Years ago I read a fascinating book by Lis Harris, Holy Days in which she chronicles a year spent with a Lubovotch family in Brooklyn. In her account of their Passover preparations she tell of the appliance salesman who buys everyone’s stoves each year and sells them one for Passover, then after Passover ends the transaction is reversed.
I tried this recipe two ways, I put the mixture into the waffle iron as written, and though when I flipped it over some eggs ran out, it made a nice eggy waffle. I also tried wooshing the whole mixture in the food processor, but there wasn’t much difference, and then I had something extra to wash. To minimize the egg running out I suggest waiting about 20 seconds before closing and flipping the waffle iron. Though our waffles weren’t crispy on the outside, they were custard-y and delicious. Rachel and I agreed they were so good we’d like them any time.
One thing Passover and Easter have in common is the need for plenty of eggs!
