Game Day Beef, Bacon and Tomato Stuffed Mushrooms

Ingredients
- 1 lb. Ground, grass fed beef
- 8 Oz. Bacon
- 3 Scallions
- 1 Ten Oz. can Ro-Tel mild tomatoes, drained
- 1 Tsp. Garlic powder
- 1 Tsp. salt
- 2 lbs. Large stuffing mushrooms
- 8 Oz. Grated cheddar cheese
Instructions
- Preheat oven to 375F
- Remove stems from mushrooms and chop
- Put bacon on a sheet tray and bake until crispy 15-20 minutes depending on how thick the bacon is
- Reduce oven heat to 325F
- When bacon is done, reserve half, and chop the rest
- Brown beef, add chopped mushroom stems, and cook another two minutes
- Add scallions, tomatoes, chopped bacon, garlic powder and salt and mix well
- Spoon filling into mushroom caps, filling generously
- Put mushrooms into a lightly oiled baking dish, keeping them close together
- Cut remaining bacon into enough squares for each mushroom, lay one piece on each mushroom, and then sprinkle the cheese over the pan of mushrooms
- Bake for thirty minutes
