BBT Stuffed Mushrooms

Game Day Beef, Bacon and Tomato Stuffed Mushrooms

Ingredients
  1. 1 lb. Ground, grass fed beef
  2. 8 Oz. Bacon
  3. 3 Scallions
  4. 1 Ten Oz. can Ro-Tel mild tomatoes, drained
  5. 1 Tsp. Garlic powder
  6. 1 Tsp. salt
  7. 2 lbs. Large stuffing mushrooms
  8. 8 Oz. Grated cheddar cheese
Instructions
  1. Preheat oven to 375F
  2. Remove stems from mushrooms and chop
  3. Put bacon on a sheet tray and bake until crispy 15-20 minutes depending on how thick the bacon is
  4. Reduce oven heat to 325F
  5. When bacon is done, reserve half, and chop the rest
  6. Brown beef, add chopped mushroom stems, and cook another two minutes
  7. Add scallions, tomatoes, chopped bacon, garlic powder and salt and mix well
  8. Spoon filling into mushroom caps, filling generously
  9. Put mushrooms into a lightly oiled baking dish, keeping them close together
  10. Cut remaining bacon into enough squares for each mushroom, lay one piece on each mushroom, and then sprinkle the cheese over the pan of mushrooms
  11. Bake for thirty minutes
