Bacon and Tomato Pasta

Ingredients

  • 6oz Thick sliced bacon (coarsely chopped)
  • 1lb Fresh tomatoes (any tomato works for this, cut cherry or grape tomatoes in half, larger ones on quarters)
  • 1/2 cup Chicken stock
  • 2 cloves Garlic
  • 1lb Pasta

Directions

Step 1
Get a large pot of water boiling for pasta
Put a large saute pan on medium-low heat, and when pan is hot add bacon
Step 2
Cook bacon over medium-low heat for 10-15 minutes until the edges are starting to brown
Add garlic and cook about 2 minutes, stirring to keep garlic from burning
Add tomatoes to pan an cook another 15 minutes
Step 3
Add chicken stock to pan, and cook pasta
Before draining pasta reserve 1 cup or more of the pasta water
Step 4
Drain pasta and return to pot without heat on
Add sauce to pan, tossing gently, and adding pasta water as needed
Step 5
Serve with fresh grated Parmesean cheese
