Bacon and Tomato Pasta

Ingredients
- 6oz Thick sliced bacon (coarsely chopped)
- 1lb Fresh tomatoes (any tomato works for this, cut cherry or grape tomatoes in half, larger ones on quarters)
- 1/2 cup Chicken stock
- 2 cloves Garlic
- 1lb Pasta

Step 1 | |
Get a large pot of water boiling for pasta Put a large saute pan on medium-low heat, and when pan is hot add bacon | |

Cook bacon over medium-low heat for 10-15 minutes until the edges are starting to brown Add garlic and cook about 2 minutes, stirring to keep garlic from burning Add tomatoes to pan an cook another 15 minutes | |

Add chicken stock to pan, and cook pasta Before draining pasta reserve 1 cup or more of the pasta water | |
Step 4 | |
Drain pasta and return to pot without heat on Add sauce to pan, tossing gently, and adding pasta water as needed | |

Serve with fresh grated Parmesean cheese |
