Rice Pilaf

Ingredients
- 1 tablespoon clarified butter or olive oil
- 2 cups long grain white rice
- 1/2 Large Spanish onion (diced fine)
- 4 cups chicken stock or water
Directions
Step 1 | |
Heat fat in a heavy saucepan on medium heat | |

Add onions and stir until translucent, add any aromatics you'd like such as chopped carrots, minced garlic, or spices | |

Add stock and increase heat to high, bring to a boil | |

When stock is boiling, stir in rice, and bring liquid back to a boil | |
Step 5 | |
Once liquid has started boiling, stir once more, turn the heat as low as you can, top with a tight-fitting lid, and simmer undisturbed for 20 minutes. Turn off heat, and let rice sit undisturbed for another 5 minutes. Fluff with fork, and serve. If you want to add fresh herbs, now is the time to do that. |
