Ingredients

  • 1 tablespoon clarified butter or olive oil
  • 2 cups long grain white rice
  • 1/2 Large Spanish onion (diced fine)
  • 4 cups chicken stock or water

Directions

Step 1
Heat fat in a heavy saucepan on medium heat
Step 2
Add onions and stir until translucent, add any aromatics you'd like such as chopped carrots, minced garlic, or spices
Step 3
Add stock and increase heat to high, bring to a boil
Step 4
When stock is boiling, stir in rice, and bring liquid back to a boil
Step 5
Once liquid has started boiling, stir once more, turn the heat as low as you can, top with a tight-fitting lid, and simmer undisturbed for 20 minutes.
Turn off heat, and let rice sit undisturbed for another 5 minutes.
Fluff with fork, and serve. If you want to add fresh herbs, now is the time to do that.
